HEAT

Humans have been cooking their food for the last two million years.  HEAT applied to food from fire changes the structure of many foods to make it more nutritious or changes some ingredients from inedible to edible.  It is argued by some that cooking of food is what allowed for the growth of the human brain and distinguishes us as humans.  That will be left to the food historians, archaeologists and paleontologists.
